Lovin' Lentejas Soup

May Gray and June Gloom are no joke here in San Diego. The beach cities are layered in a dense, wet fog. I'm wearing sweaters and making soup. Watch my YouTube Video here. My Lovin' Lentejas soup is one I have been making for 25 years. A recipe I was given while studying abroad in Granada, Spain. It's your antidote for any cold, wet day and is an excellent source of protein, fat, and fiber for a balanced meal. Gluten & Dairy Free.
Directions:
Add all the ingredients into a pot and bring to a boil, then simmer for 30 minutes.
Soup Ingredients:
- 1 small packet of green lentils
- 2:1 Ratio of Water or Chicken Broth*
- 2 ripe tomatoes (Grated) or 1 can of crushed or diced tomatoes
- 2 chopped carrots 1 chopped onion
- 1 head of garlic
- 3-6 bay leaves
- 2 Chicken Sausages chopped or 2 Spanish Chorizos chopped (Optional)
- 3 Tbsp. of Olive Oil from Spain
- *If using water add 1 Tbsp. of Better than Bouillon (Chicken or Vegetable)
Toppings:
- Season to taste
- Serve with a toasted piece of gluten-free bread or lightly fried, chopped and added on top
- 1 tsp of White Vinegar
- Chopped parsley or Fresh Herbs
